Grapefruit, Avocado, and Prosciutto Breakfast Salad

Ingredients
1 small ruby red grapefruit
¾ teaspoon dark sesame oil
⅛ a teaspoon of freshly ground black pepper
A pinch of kosher salt
1 cup microgreens, arugula or torn lettuce leaves
½ ripe peeled avocado, thinly sliced
1 extra thin slice of prosciutto

Bright, refreshing grapefruit blends surprisingly well with the nutty-earthy touch of toasted sesame oil. This dish is packed with heart - healthy fats that will keep you full for a long time.
Peel the grapefruit; slice the grapefruit slices and place in a medium bowl. Squeeze the membranes to extract about 1 tablespoon of juice. Set the pieces aside. Add the oil, pepper and salt to the juice, stirring with a whisk. Add the herbs; stir to coat. Place the greens on a plate; top with the grapefruit, avocado, and prosciutto wedges.
