Green Beans with Bacon-Balsamic Vinaigrette

Ingredients
2 pounds green beans
2 slices of bacon
¼ cup minced shallots
3 tablespoons coarsely chopped almonds
2 tablespoons brown sugar
¼ cup white balsamic vinegar

Chunks of crispy bacon, almonds and balsamic vinegar will help fill steamed green beans and make them delicious even for those who do not like vegetables. Or try the same method with any of your favorite vegetables-from cabbage to peas and corn.
Boil the green beans in boiling water for 2 minutes. Drain and rinse under cold water. Drain well and set aside.Saute the bacon in a small skillet over medium-high heat until crisp. Remove the bacon from the pan. Crumble; set aside. Add the shallots to the bacon fat in the pan; saute for 1 minute. Add the almonds; saute for 1 minute. Remove and allow to cool. Add the sugar and vinegar; stir until the sugar is dissolved. Add the chopped bacon.Pour the vinaigrette over the beans, stirring gently to coat.
