Green Beans with Caramelized Shallots

Ingredients
2 pounds kidney beans (tiny green beans), chopped
3 tablespoons butter
1 tablespoon light brown sugar
1 tablespoon olive oil
1 pound shallots, halved lengthwise and peeled
2 tablespoons red wine vinegar
To make
Tender green beans with a crisp crust get a sweet, smoky taste with the addition of caramelized shallots.
Cook the green beans in boiling salted water, covered, for 3-4 minutes or until crisp; strain. Dip the beans in ice water to stop the cooking process; drain.Melt the butter and brown sugar with the olive oil in a large skillet over medium-high heat; add the shallots and simmer for 2 minutes. Reduce the heat to medium-low, add the vinegar, and simmer for 10 minutes or until the shallots are golden brown and soft.Increase the heat to medium-high; add the green beans and simmer for 5 minutes or until completely warmed through. Season with salt and freshly ground pepper to taste.
