Breaded Shrimp Skewers

Ingredients

1 pound shrimp, peeled and deveined, tails removed
1 cup panko or dried bread crumbs
2 tablespoons oil
1 tsp lemon pepper (or 1/4 teaspoon salt + 1/4 teaspoon pepper + 1/2 teaspoon lemon zest)
1 tsp season salt (or 1/4 teaspoon salt + 1/4 teaspoon garlic + 1/4 teaspoon sugar + 1/4 teaspoon paprika)
Set of wooden or metal skewers

To make

This shrimp dish can be cooked inside on a stove top or outside on a grill over fire. When served with fresh lemon and rice, it's a perfect summer dish!

Directions:

Preheat skillet to medium heat.

If using wooden skewers and cooking over fire, soak them in water for 30 minutes before using. This prevents them from catching fire.

Thread shrimp onto skewers, piercing one end near tail and one end near head.

Dip both sides of shrimp into bread crumbs, and then oil. Lightly season both sides with lemon pepper and season salt.

Spray cooking surface with nonstick spray or brush with oil, and cook shrimp for 2-3 minutes per side, or until shrimp are opaque.
