Green Beans with Shallots and Almonds

Ingredients

2 pounds green beans, cut into 1-inch-thick slices
2 tablespoons olive oil
2 cups chopped shallots (about 4 large)
2 tablespoons unsalted butter, at room temperature
½ cup chopped almonds, toasted
To make
Fill a large bowl with ice cubes and water. Bring a large pot of salted water to a boil. Add the green beans to the pan and cook until crisp, about 5 minutes. Drain and submerge the beans in an ice bath. Dry the beans again on paper towels.Heat the olive oil in a large skillet over medium-high heat. Add the shallots and saute until they are soft and lightly browned, about 7 minutes. Add the green beans and butter and cook until the beans are warmed through, about 2 minutes. Sprinkle with toasted almonds and serve.
