Grilled Chicken Skewers

Ingredients
2 pounds boneless and skinless chicken breasts, cut into 2-inch pieces
¼ cup olive oil

Grilled chicken doesn't need anything but olive oil, salt and pepper to achieve perfection. If desired, serve the kebabs with your favorite barbecue sauce, drizzle with fresh green salad-and you're done, dinner is ready.
Soak a package of bamboo skewers in warm water for 20-30 minutes; strain. Preheat the grill to medium-high heat.Place 3 pieces of chicken on each skewer. Brush the chicken with olive oil and sprinkle with salt and pepper. Drizzle a paper towel with vegetable oil and, holding it with tongs, gently brush the grill grate with oil (or, after removing it from the heat, spray the grill grate liberally with non-stick cooking spray). Put the chicken skewers on the grill so that they do not touch. Cover the grill. Cook the chicken on the grill until tender, 6 to 8 minutes, turning once. Serve hot or at room temperature. Or let them cool, cover with plastic wrap, and refrigerate to serve later.
