Grilled Chicken with Fruit Salsa

Ingredients
Chicken:
½ cup fresh lemon juice (about 4 lemons)
½ cup low-sodium soy sauce
1 tablespoon minced peeled fresh ginger
1 tablespoon lemon pepper
2 garlic cloves, minced
6 (6 oz) skinless and boneless chicken breast halves
Cooking Spray
Salsa:
1 ½ cups diced pineapple
¾ cup peeled kiwis, diced (about 3 kiwis)
¾ cup coarsely chopped orange slices
½ cup chopped, peeled mango
½ cup diced red onion
2 tablespoons chopped fresh cilantro
1 ½ teaspoons ground cumin
¼ teaspoon salt
⅛ a teaspoon of ground black pepper
1 small jalapeno pepper, peeled and finely chopped
To make
Combine lemon juice, soy sauce, fresh ginger, lemon pepper, and garlic to make an amazing grilled chicken marinade. Fruit salsa adds sweetness and crunchy flavor to this tropical dish.
To prepare the chicken, combine the juice, soy sauce, ginger, lemon pepper, and garlic in a large zippered plastic bag. Place the chicken in a plastic bag, cover and shake to coat. Marinate in the refrigerator for 1 hour, turning once.Prepare a grill or broiler.Remove the chicken from the bag; drain the marinade. Place the chicken on a grill rack or broiler tray greased with cooking spray; cook for 5 minutes on each side or until the chicken is tender.To make the salsa, combine the pineapple and other ingredients, stirring gently. Serve with chicken.
