Grilled Corn with Chipotle Butter

Ingredients
4 ears of corn
3 tablespoons unsalted butter
2 teaspoons chopped chipotle chili seeds in adobo sauce
2 teaspoons fresh lime juice
½ teaspoon salt
¼ teaspoon freshly ground black pepper
¼ cup grated or crumbled queso fresco
4 lime slices (optional)
To make
Canned chipotle chili in adobo sauce is usually sold in the ethnic cuisine sections of supermarkets. (Keep a spray bottle filled with water handy to extinguish the flame when grilling corn.)
Dip the peeled corn in a large bowl of cold water. Let it soak for at least 30 minutes.Melt the butter in a small saucepan over low heat. Add the crushed chipotle chili, lime juice, salt and black pepper; cook for 30 seconds, stirring to blend the flavors.Preheat the grill to medium-high heat. Peel the corn husks; brush with chipotle oil to coat. Grill for about 4 minutes, turning frequently, or just until the corn is soft and nicely browned. Immediately top with crumbled cheese and serve with lime slices, if desired.
