Grilled Fish with Cucumber-Tomato Salsa

Ingredients
1 ½ teaspoons ground cumin, divided
½ teaspoon salt, divided
1 teaspoon grated lime zest
2 tablespoons fresh lime juice
1 tablespoon olive oil
1 sliced cucumber
1 cup grape tomatoes, halved
1 green onion, thinly sliced
1 jalapeno, peeled and crushed
1 tablespoon chopped fresh mint
1 pound hard, tender fish fillet
To make
Serve grilled fish with homemade salsa seasoned with fresh vegetables and slightly hot jalapeno peppers. Use any kind of soft one. fillet of hard white fish.
Combine 1 teaspoon cumin, 1/4 teaspoon salt, lime zest, lime juice, and olive oil in a medium bowl. Add cucumber, tomatoes, green onions, jalapeno and mint. Set aside.Sprinkle the fish with the remaining 1/2 teaspoon cumin and 1/4 teaspoon salt. Cook over medium-high heat for 7 minutes or until tender. Drizzle with salsa and serve.Note: This simple cucumber and tomato sauce goes well with any seafood-just buy your favorite one. If you choose a thin fillet, such as flounder, lay it out on a strong aluminum foil so that the fish does not suffer when cooking on the grill.Wine Note: Quara, a new wine brand from Argentina, offers a pair of aromatic white varieties that pair well with seafood dishes. Cafayate Valley Torrontes ($10) - a large dry white dish with hints of tropical fruit. Rich Chardonnay ($10) with a hint of oak adds a crisp finish.
