Grilled Mahimahi with Mango Salsa

Ingredients
¼ cup light coconut milk, divided
6 tablespoons fresh lime juice (about 4 limes), divided
4 (6 oz) mahimaha or other hard white fish fillet
1 ½ cups diced peeled ripe mango (about 1/2 pound)
¾ cup diced English cucumbers (about 1/2 medium)

To make
Garnish your grilled mahimahis with sweet mango salsa for a healthy, palatable summer dinner.
Combine 3 tablespoons of milk and 3 tablespoons of juice in a shallow bowl; add the fish, turning it over to coat. Cover and marinate at room temperature for 15 minutes.Combine the remaining 1 tablespoon of milk, remaining 3 tablespoons of juice, mango, and the next 6 ingredients (including chili) in a bowl. Add 1/4 teaspoon salt; mix well.Remove the fish from the platter; drain the marinade. Sprinkle the fish with the remaining 1/2 teaspoon salt and pepper. Preheat a grill pan over medium-high heat. Brush the mold with cooking spray. Cook the fish for 4 minutes on each side or until the desired degree of roasting is reached. Serve with mango salsa. Garnish with lime slices and coriander sprigs if desired.
