Grilled Pineapple with Mint Sugar

Ingredients
3 tablespoons sugar
2 tablespoons chopped fresh mint leaves
¾ teaspoon finely grated lime zest
1 medium-sized pineapple, peeled, cored and cut into 12 slices
1 tablespoon melted butter

Pineapple slices fried on coals caramelize and become very juicy, which in itself is a worthy dessert. Take it one step further, sprinkle a generous amount of mint and lime sugar on top to give each bite an incredible flavor and a bit of a crisp finish. It's delicious on its own or served with low-fat vanilla ice cream.
Preheat the grill or grill pan to medium-high heat.Combine the sugar, mint, and zest in a mini food processor; grind until the mint is finely ground (the mixture should resemble wet green sand).Place the pineapples on a grill rack covered with cooking spray; cook for 3-4 minutes on each side or until golden brown. Place the pineapple on a platter; drizzle evenly with butter. Sprinkle with the sugar mixture; let stand for 2 minutes before serving.
