Grilled Pork Chops with Apple-Bourbon Glaze
Bookmark this page

Ingredients
2 tablespoons dark brown sugar
1 ½ teaspoons kosher salt
1 teaspoon freshly ground black pepper
1 teaspoon garlic powder
½ teaspoon paprika
4 (12 oz) boneless pork rib chops
2 tablespoons olive oil
Apple-Bourbon glaze
To make
The key to success here is smearing the chops with apple-Bourbon frosting during the last few minutes of grilling, turning them over frequently and smearing them to give them a layered, varnished look. Garnish the chops with halves of small grilled apples smeared with icing.
Mix the first 5 ingredients together. Brush the pork with olive oil and rub the sugar mixture on both sides. Transfer the pork to a 9-inch x 13-inch roasting pan; cover and refrigerate 12 to 24 hours. Remove the pork from the refrigerator and let it stand at room temperature for 30 minutes. Meanwhile, prepare the icing.Preheat the grill to 350-400 ° (medium-high). Grill the chops, covered, for 6 to 8 minutes on each side, or until almost cooked through. Brush the chops with the icing; flip and spread the icing on the other side. Cook on the grill, covered, for 2 minutes.Repeat the process without covering the grill lid and turning the chops over every 10 seconds until the glaze thickens and the chops are browned.
