Grilled Soy-Glazed Pork Chops

Ingredients
4 pork chops with 1 1/2-inch thick bones, about 4 pounds total
1 ½ teaspoons kosher salt
½ teaspoon freshly ground pepper
¼ cup soy sauce
1 tablespoon rice wine vinegar
1 tablespoon fresh lime juice (from about 1/2 lime)
1 teaspoon light brown sugar per pack
¼ teaspoon srirachi, optional
To make
Start a fire in a charcoal grill (approximately 375 ° F to 400 ° F) or preheat a gas grill to medium heat. Season the chops evenly with salt and pepper on both sides. Leave it at room temperature for 20 minutes.In a small bowl or measuring cup, combine soy sauce, vinegar, lime juice, brown sugar, and sriracha, if using. Place the chops directly on the coals and cook under the lid for 3 minutes. Flip and brush with soy mixture, cover and cook for another 3 minutes. Continue turning the chops and smearing the soy mixture every 3 minutes until tender, about 18-21 minutes in total, or until the internal temperature of the chops reaches 150 ° F (closer to the bone). Remove from heat, brush again, and let stand for 10 minutes before serving.
