Grilled Steak with Pineapple Rice

Ingredients

¼ cup low-sodium soy sauce
½ teaspoon freshly ground black pepper
4 beef tenderloin fillets (4 oz each)
Cooking Spray
1 can pineapple slices (8 oz), squeezed
6 green onions
2 packs (8.8 oz each) of pre-cooked brown rice (such as Uncle Ben's)
.88 teaspoon kosher salt

To make

Add a tropical touch to your steak dinner with flavorful grilled pineapple rice. This dish is prepared for dinner in less than 30 minutes from the grill pan to the table; so fast that it is essentially a break from the strenuous preparation for dinner.
Transfer the soy sauce, pepper, and beef to a large zippered plastic bag. Add the sauce to the beef; let stand at room temperature for 7 minutes, turning the bag over occasionally.While the steak is marinating, preheat a large grill pan over medium-high heat. Brush the mold with cooking spray. Add the pineapple and green onions to the pan; cook for 5 minutes or until they are lightly browned, browning evenly. Cut the onion and pineapple into small pieces. Preheat the rice according to the package directions; add the pineapple, onion, and salt. Keep warm.Transfer the beef to a grill pan covered with cooking spray; cook for 3 minutes on each side or until desired browning. Serve beef with rice mixture.
