¼ cup minced shallots
3 ounces (about 1/3 cup) guava paste, diced
¼ cup rice vinegar
1 teaspoon dark sesame oil

Try it as a salad dressing or as a marinade for pork, chicken or fish. Guava paste is a bar about an inch thick, wrapped in cellophane, in a 16-ounce package. It is sold in Latin American markets and in large supermarkets. Store unused food in the refrigerator, because it is easier to slice when it is chilled.
Combine the first 3 ingredients in a small saucepan. Place on a medium heat; cook for 5 minutes or until the guava paste is dissolved, stirring frequently. Remove from heat. Add the rice vinegar and dark sesame oil, beating with a whisk until smooth. Store in an airtight container in the refrigerator for up to 1 week.
