Halibut with Balsamic Cherry Tomatoes

Ingredients
1 ½ tablespoons olive oil, divided
4 halibut fillets (6 oz.) without skin
½ teaspoon salt, divided
¼ teaspoon freshly ground black pepper
2 cups cherry tomatoes
3 garlic cloves, minced
2 tablespoons balsamic vinegar
2 tablespoons chopped fresh basil

Eco-friendly choice. For a more economical option, try replacing the halibut fillet with fish with a similar texture, such as cod.
Preheat a large nonstick skillet over medium-high heat. Add 1 tablespoon of butter and stir to coat. Sprinkle the fish with 1/4 teaspoon of salt and pepper. Add the fish to the pan; cook for 5 minutes on each side or until the fish is easily cut with a fork. Remove the fish from the pan; keep warm.Add the remaining 1 1/2 teaspoons of oil to the skillet. Add tomatoes and garlic; simmer for 3 minutes. Add the vinegar; cook for 1 minute or until tomatoes start to pop. Add the basil and the remaining 1/4 teaspoon salt. Serve the tomato mixture with the fish.
