1 tablespoon dried provencal herbs
2 tablespoons dijon mustard
½ teaspoon kosher salt
¼ teaspoon freshly ground black pepper
1 clove garlic, minced
8 lamb loin chops (4 oz.), trimmed

A savory glaze of Dijon mustard and dried herbs also goes well with chicken thighs or beef fillet. Provencal herbs are a combination of several dried herbs, including lavender, thyme, rosemary and basil, which evoke the tastes of the south of France.
Cook on the grill.Combine the first 5 ingredients; rub the lamb evenly on both sides.Place the lamb on a grill rack greased with cooking spray; cook for 4 minutes on each side or until desired browning degree.
