Huevos Rancheros Tacos

Ingredients
4 (6-inch) corn tortillas
Cooking Spray
½ cup grated 4-pack Mexican low-fat blender
½ cup black beans, washed and drained
2 teaspoons olive oil
4 large eggs
¼ teaspoon black pepper
¼ cup fresh pico de gallo
2 tablespoons mexican cream
½ ripe peeled avocado, chopped
¼ cup fresh coriander leaves
4 lime wedges
To make
It's more like a taco using a knife and fork. The soft egg yolk oozes out and coats the filling.
Preheat the grill to high heat.Place the tortillas on a baking sheet; lightly brush them with cooking spray. Bake for 2 minutes; remove the baking sheet from the oven. Flip the tortillas over. Sprinkle each tortilla with 2 tablespoons of cheese and 2 tablespoons of beans. Bake for 1 minute or until the cheese is melted. Remove from the oven.Preheat a large nonstick skillet over medium-high heat. Pour the oil into the pan; stir to coat. Add the eggs to the skillet; cook for 2 minutes. Cover and cook for 2 minutes or until the whites are set. Place 1 egg in the center of each tortilla; sprinkle with pepper. Sprinkle evenly over the pico de gallo tacos, cream, avocado, and cilantro. Serve with lime.
