Instant Pot Pork Shoulder

Ingredients
1 (4 lb) boneless pork shoulder, cut into 4 pieces
8 garlic cloves, halved lengthwise
1 tablespoon kosher salt
1 ½ teaspoons black pepper
2 teaspoons olive oil
½ cup water
To make
Make small incisions in the pork with a paring knife and stuff them with half a clove of garlic. Sprinkle evenly on all sides with salt and pepper. In the instant pan, press the Saute button and let it heat up for 2-3 minutes. Add the butter. Saute 2 pieces of pork in oil and cook, turning occasionally, until browned on all sides. Transfer to a plate and repeat with the remaining 2 pieces of pork.Add the sauteed pork back to the instant pot and pour in the water. Click “Cancel”. Cover the instant pot with the lid and turn the valve to the "Seal" position. Put on "High pressure" for 65 minutes.Carefully open the valve and allow steam to escape. Transfer the pork to a plate and chop with a fork.
