Ingredients
5 peeled kiwis, divided
3 cups ice
¼ cup light rum
¼ cup Midori (melon-flavored liqueur)
3 tablespoons coconut cream (for example, Coco Lopez)
1 can crushed pineapple juice (8 oz.) without the skin

Here's a fun version of the classic summer umbrella drink. Kiwi and melon liqueur gives the cocktail a green hue and slightly sharp taste. Although we used green kiwi, you can replace it with a golden variety for a sweeter taste and golden color.
Cut 4 kiwis into quarters and put them in a blender. Set the remaining kiwis aside. Add ice and other ingredients to a blender; whisk until smooth. Strain the mixture through a sieve into a jug; remove the seeds. Divide evenly into 6 cups. Cut the remaining kiwis into 6 slices; garnish each glass with 1 kiwi slice.
