Ingredients

¼ cup flour
½ teaspoon kosher salt, plus more to taste
½ teaspoon freshly ground black pepper, plus more to taste
Lamb drumsticks weighing 4 ¾ pounds
2 tablespoons olive oil
3 minced shallots
2 garlic cloves, minced
½ teaspoon ground cloves
½ teaspoon ground allspice
2 cups good quality beef broth
½ cup dry red wine
½ cup chopped canned tomatoes
½ cup seedless olives, dried in oil, zest and juice of 1 orange
2 tablespoons fresh chopped green onions

To make


Preheat the oven to 325° F.Combine flour, salt and pepper. Roll the lamb in flourmixture. Heat the olive oil in a roasting pan, then add the lamb. Saute on medium-high heat.saute on all sides until golden brown, 3-4 minutes on each side. (For extinguishingfor instructions, see the page ) Remove the lamb and set aside. Add itadd the shallots, garlic, cloves and allspice and cook until the mixture is smooth.saute until golden brown, about 5 minutes. Add the broth, wine, and tomatoes. Usinguse a wooden spoon to scrape all the brown bits off the bottom of the pan. Refundtransfer the lamb to a baking dish, cover tightly and place in the oven. Cook until done.tender lamb is cooked with a fork for 2 ½ to 3 hours. Place the lamb on serving plattersand put the pan on a moderately high heat. Add the olives and orange zest,add the orange juice and bring to a boil. Reduce the amount of liquid to a small amountfor thickening, 3 to 5 minutes. Ladle them on top of the lamb and sprinklegreen onions.
