Ingredients

½ pound ground turkey
1 can tomato puree (14.5 oz)
3 cans unsalted tomato sauce (8 oz.)
⅓ cup chopped green pepper
⅓ cup chopped yellow onion
1 minced garlic clove
1 bay leaf
1 ¼ teaspoons italian seasoning
½ teaspoon dried oregano
¼ teaspoon fennel seeds
⅛ a teaspoon of ground red pepper
Pinch of ground nutmeg
1 (12 oz) container of cottage cheese with 2% reduced fat content
1 pack (10 oz) frozen chopped spinach, thawed and squeezed dry
2 tablespoons grated parmesan cheese
Spray for cooking vegetables
18 wonton wrappers
1 cup (4 oz) grated partially low-fat mozzarella cheese

Our favorite recipe from the Cooking Light category - this lasagna in a light form tastes just as good as the traditional version.
Saute the turkey mince in a skillet over medium-high heat, stirring frequently, for 8 minutes or until lightly browned; dry well with paper towels. Combine the turkey, tomato puree, and the following 10 ingredients in a large saucepan; cover and cook over low heat, stirring occasionally, for 30 minutes. Discard the bay leaf.Preheat the oven to 350 degrees. Combine cottage cheese, spinach and parmesan cheese.Brush a 13-inch x 9-inch baking dish with cooking spray. Transfer 1 cup of the turkey mixture to a roasting tin. Top with 6 wonton wrappers (slightly overlapping), 1 cup spinach mixture, and 1 1/2 cups turkey mixture in a single layer. Repeat the layers twice, starting with the wontons and ending with the turkey mixture.Bake at 350 ° C for 40 minutes or until fully warmed through. Remove from the oven. Top with mozzarella cheese and bake for another 5 minutes.
