Ingredients

1 large egg
⅓ cup of lemon curd
6 ounces frozen whipped cream filling (about 3 cups), defrosted
1 (15.25 oz) kg lemon cake mix (e.g. Duncan Hines Lemon Supreme)
½ cup granulated sugar
½ cup (2 oz) powdered sugar

To make

No one will know that you used packaged cake mix and chilled whipping cream to make this irresistible buttery cookie. It became a hit in our test kitchen, especially due to its soft texture and crisp crust.
Preheat the oven to 350°F. Whisk together the egg and lemon curd in a large bowl until smooth. Add the whipped powder, stirring well. Add the cake mix until smooth.Pour the granulated sugar into a medium bowl. In a separate medium bowl, add the powdered sugar. Shape the dough into balls (about 2 tablespoons each). Working 1 ball at a time, roll in granulated sugar until smooth. Sprinkle the balls with powdered sugar and roll well. Place the balls 3 inches apart on 2 large baking sheets lined with parchment paper (8 cookies per baking sheet). (The remaining dough balls can stand uncovered at room temperature for up to 30 minutes.)Bake in the preheated oven until the tops are set and cracked, 12 to 14 minutes (the tops will be soft). Cool on baking sheets for 5 minutes. Transfer to a wire rack and let cool completely, about 10 minutes.
