Lemon-Gin Fizzy Punch

Ingredients
2 cups sugar
4 sprigs of fresh mint
1 vanilla pod, chopped
1 bottle of gin (750 ml)
1 3/4 cups fresh lemon juice
1 bottle (750 ml) of dry sparkling wine, chilled
Side dishes: fresh mint leaves, citrus slices

In this punch, we prefer gin with a more plant-based flavor, such as Bristow.
Combine the sugar and 2 cups of water in a microwave-safe bowl; reheat in the microwave on high power for 5 minutes. Stir to dissolve the sugar. Add the mint and vanilla pods; cool completely. Skip the mint and vanilla pods.Combine gin, lemon juice, 2 cups water, and 2 1/2 cups mint and vanilla syrup. Cover and refrigerate for 4 hours. Combine the gin mixture and sparkling wine in a large punch bowl.
