Savory Cheese Cookies


1 cup butter, softened to room temperature
1 pound sharp cheddar cheese, shredded
2.5 cups flour
1 teaspoon salt
1 teaspoon cayenne or red pepper (optional, to make it spicy)

These cookies are perfect for the person that loves cheese! They are best when made with very strong tasting, hard cheeses, such as sharp cheddar or parmesan. 

  1. Combine butter and cheese until smooth
  2. Add flour, salt, and optional red pepper and mix thoroughly
  3. Shape the dough into rolls and refrigerate for 1 hours or until the dough has hardened. You can keep the dough in the refrigerator for up to 1 week
  4. Preheat oven to 375°f/190°c
  5. Cut the rolled dough into thin slices and place on a clean baking sheet
  6. Bake for about 10 minutes or until the edges just start to brown slightly. You can cook them longer if you want hard cookies, or shorter if you like soft cookies
  7. Allow to cool and serve!
