Lemon-Herb Aioli

1 clove garlic
1 tablespoon lemon juice
¾ cup low-fat mayonnaise
3 tablespoons fresh parsley
1 tablespoon fresh mint
1 tablespoon chopped green onion
1 teaspoon lemon zest

In a blender, combine 1 clove of garlic with 1 tablespoon of lemon juice. Add 3/4 cup low-fat mayonnaise, 3 tablespoons fresh parsley, 1 tablespoon fresh mint, and 1 tablespoon green onions (all minced); chop until smooth. Add 1 tsp lemon zest. Serve immediately or cover and refrigerate for up to 1 day.
