Lemon-Shallot Scallops

Ingredients
2 teaspoons olive oil
1 ½ pounds scallops
½ teaspoon salt
¼ teaspoon black pepper
2 teaspoons butter
3 tablespoons minced shallots
½ teaspoon bottled minced garlic
¼ cup dry white wine
1 tablespoon fresh lemon juice
2 tablespoons finely chopped fresh parsley
Lemon wedges (optional)

This simple scallop dish will make a light but elegant weekday evening meal. If you don't have shallots on hand, replace them with the white part of green onions for a similar flavor. Serve the scallops with pasta or a mixture of herbs for a quick and healthy meal.
Heat the oil in a large nonstick skillet over medium-high heat. Sprinkle the scallops with salt and pepper. Add the scallops to the skillet and saute for 2 minutes on each side. Remove the scallops from the pan and leave them warm.Melt the butter in a large skillet. Add the shallots and garlic; simmer for 30 seconds. Add the wine and juice; cook for 1 minute. Return the scallops to the pan; stir to coat. Remove from heat; sprinkle with parsley. Serve with lemon wedges if desired.
