Lemony Orzo-Veggie Salad with Chicken

Ingredients
¾ cup raw orzo
¼ teaspoon grated lemon zest
3 tablespoons fresh lemon juice
1 tablespoon extra virgin olive oil
½ teaspoon kosher salt
½ teaspoon minced garlic
¼ teaspoon honey
⅛ a teaspoon of freshly ground black pepper
1 cup shredded skinless and boneless chicken breast for grilling
½ cup diced English cucumbers
½ cup chopped red bell pepper

Prepare the orzo according to the instructions on the package, without adding salt or fat. Drain and rinse with cold water; drain and transfer to a large bowl.While the orzo is cooking, combine the lemon zest and the following 6 ingredients (with the addition of black pepper), mixing well with a whisk. Drizzle the orzo with the juice mixture; stir to coat. Add the chicken and the next 4 ingredients (with dill added); mix gently to combine. Sprinkle with cheese.
