Linguine and Spinach with Gorgonzola Sauce

Ingredients
1 pack (9 oz) fresh linguine
1 tablespoon butter
1 tablespoon all-purpose flour
1 can condensed low-fat milk (12 oz.)
¾ cup (3 oz) shredded gorgonzola cheese
¾ teaspoon salt
¼ teaspoon ground black pepper
1 sachet (6 oz) fresh spinach (approximately 6 cups)

Prepare the pasta according to the instructions on the package, without adding salt or fat.While the pasta is cooking, melt the butter in a medium saucepan over medium heat. Add the flour; cook for 1 minute, stirring constantly with a whisk. Gradually add the milk, stirring constantly with a whisk. Increase the heat to medium-high; bring to a boil, stirring constantly. Reduce heat; simmer 3 minutes or until sauce thickens slightly, stirring frequently. Remove from the heat and add the cheese, salt and pepper. Combine the sauce, pasta, and spinach, stirring gently to coat.
