Ingredients
2 teaspoons vegetable oil
2 teaspoons butter
1 cup chopped onion
1 cup chopped green bell pepper
2 garlic cloves, minced
8 cups frozen shredded potato okroshka, defrosted (about 1 pound)
½ teaspoon salt
½ teaspoon ground black pepper
4 ounces ham, diced, 33% less sodium
¾ cup (3 oz) grated low-fat cheddar cheese

Frozen hash browns make this version of a popular snack dish quick and easy.
Heat the butter in a large nonstick skillet over medium-high heat. Add the onion; cook for 5 minutes. Add the bell pepper and garlic; cook for 3 minutes. Add the potatoes, salt, pepper, and ham; cook for 16 minutes or until the potatoes are golden brown, stirring occasionally. Sprinkle cheese on top; cook for 2 minutes or until the cheese is melted.
