Mango and Paprika Pork Chops

Ingredients
4 boneless pork chops (approximately 1 1/2 pounds)
2-3 tsp hot Hungarian paprika
1 teaspoon kosher salt, divided
1 teaspoon pepper, divided
2 tablespoons olive oil
1 large mango (about 1 pound), peeled and diced
½ red onion, thinly sliced
1 green bell pepper, sliced

¼ cup coriander leaves

The spicy paprika adds spice to this dish, but feel free to replace the sweet paprika with a milder version.
Preheat the oven to 375 degrees. Dry the pork chops and sprinkle on both sides with paprika and 1/2 tsp salt and pepper on each side.Heat the oil in a large nonstick skillet over medium-high heat. Saute pork chops on both sides for about 6 minutes. Transfer to a plate.Add the mango, onion, bell pepper, and remaining 1/2 tsp of each salt and pepper to the pan. Cook, stirring frequently, until soft, about 5 minutes.Place the pork chops on top of the mango and bake until the meat is no longer pink in the center, 8 to 10 minutes. Serve the pork and mango on top of the cooked couscous and sprinkle with cilantro.Note: A nutritional analysis is provided for each serving.
