2 cups whole milk
1 cup raw quinoa, washed and drained
½ cup golden raisins
2 large eggs, lightly beaten
½ cup pure maple syrup, divided, plus more to serve
4 tablespoons melted butter, divided
2 teaspoons apple pie spice mix, divided
5 cups thinly sliced apples (about 2 medium ones)
1 tablespoon fresh lemon juice (from 1 lemon)
3/4 cup chopped walnuts

This rich and mouthwatering baked quinoa is a great healthy breakfast to make with the whole family or serve for brunch with friends.
Preheat the oven to 350°F. Combine the milk, quinoa, raisins, eggs, 1/4 cup maple syrup, 2 tablespoons butter, and 1 1/2 teaspoons apple pie spices in a medium bowl until smooth. Lightly drizzle an 11-inch x 7-inch baking dish with cooking spray and pour the quinoa mixture into the prepared baking dish. Bake in the preheated oven until cooked through, 35 to 40 minutes.Meanwhile, heat the remaining 2 tablespoons of butter in a large skillet over medium-high heat. Add the apples and cook, stirring frequently to coat, for 1-2 minutes. Add the lemon juice, remaining 1/4 cup maple syrup, and 1/2 teaspoon of apple pie spice. Cook, stirring frequently, until the apples are soft and crisp, 5 to 6 minutes.Divide the quinoa casserole into 6 bowls. Sprinkle each dish evenly with apples and chopped walnuts. Drizzle with maple syrup if desired.
