4 cups iced water
3/4 cup balsamic vinegar
¼ cup olive oil
2 tablespoons water
2 teaspoons sugar
½ teaspoon salt
½ teaspoon pepper
2 garlic cloves, minced
½ to 1 cup chopped fresh basil
6 tomatoes, thinly sliced
Cheese curl with parmesan cheese (optional)
French bread (optional)

To make

Her great tip for this pickled tomato dish is to soak the onion slices in ice water before cooking to soften them. This is a great method for cooking onions, which are added to a salad of tuna, eggs or chicken.
Combine the onion slices and 4 cups of ice water in a large bowl; let stand for 30 minutes. Drain and pat dry with paper towels.Whisk together the vinegar, olive oil, 2 tablespoons of water, and the following 4 ingredients. Add the basil.Place half of the tomato slices on a shallow plate. Top with half the onion slices. Pour over half of the dressing. Repeat with the remaining tomato slices, onion, and dressing. Cover and chill for 30 minutes. If desired, sprinkle the parmesan cheese swirls and serve with bread. Serve at room temperature.Note: The recipe can be prepared in no more than 3 hours.Per serving (with bread and parmesan): Calories 203 (36% of fat); Carbohydrates 28 g; Fiber 2; Fat 8 g; Sodium 414 mg.
