Mediterranean Chicken with Potatoes

Ingredients
4 teaspoons minced garlic, divided
1 tablespoon olive oil
1 teaspoon salt, divided
¼ teaspoon dried thyme
½ teaspoon black pepper, divided
12 small red potatoes, cut in half (about 1/2 pound)

2 pounds skinless and boneless chicken breast, cut into small pieces
1 cup vertically sliced red onion
¾ cup dry white wine
¾ cup low-sodium, fat-free chicken stock
½ cup chopped pepperoncini pepper
¼ cup pitted kalamata olives, halved
2 cups chopped plum tomatoes
2 tablespoons chopped fresh basil
1 can artichoke hearts (14 oz), peeled and quartered
½ cup (2 oz) grated fresh parmesan cheese

This delicious Mediterranean chicken dish includes small red potatoes and other classic regional ingredients such as red onions, wine, olives, tomatoes, basil, artichokes and parmesan cheese.
Preheat the oven to 400 degrees.Place 2 teaspoons of garlic, oil, 1/4 teaspoon of salt, thyme, 1/4 teaspoon of black pepper, and potatoes on a baking dish greased with cooking spray. Bake at 400 ° C for 30 minutes or until cooked through.Preheat a large roasting pan greased with cooking spray over medium-high heat. Sprinkle the chicken with 1/2 teaspoon salt and 1/4 teaspoon black pepper. Add half of the chicken to the skillet; saute for 5 minutes or until lightly browned. Remove the chicken from the pan. Repeat with the remaining chicken; remove from the pan.Add the onion to the skillet; saute for 5 minutes. Add the wine and scrape it off the pan so that the pieces don't get browned. Bring the wine to a boil; cook until reduced to 1/3 cup (about 2 minutes). Add the potatoes, chicken, broth, pepperoncini and olives; cook for 3 minutes, stirring occasionally. Add 2 teaspoons garlic, 1/4 teaspoon salt, tomatoes, basil, and artichokes; cook for 3 minutes or until completely warmed through. Sprinkle with cheese. Garnish with thyme sprigs if desired.
