Mediterranean Salmon With White Beans

Ingredients
1 medium onion, coarsely chopped
2 tablespoons olive oil, divided
1 can cannellini beans (15 oz), rinsed and dried
½ cup chopped pitted kalamata olives
1 cup halved grape tomatoes
2 tablespoons chopped fresh basil
4 (6 oz) salmon fillets
½ teaspoon salt
½ teaspoon pepper
Garnish: sprigs of fresh parsley
To make
In this Mediterranean dish of salmon with white beans, you can substitute any fish fillet. However, salmon is rich in heart - healthy omega-3 fats and has a great flavor.
Saute the onion with 1 tablespoon. Heat the oil in a saucepan over medium heat for 2 minutes or until it softens slightly. Add the beans, olives, and tomatoes; cook over medium heat, stirring occasionally, for 2 minutes or until completely warmed through. Remove from heat and add basil.Sprinkle the salmon fillets evenly with salt and pepper. Saute the salmon in a large nonstick skillet, adding the remaining 1 tbsp. Heat the oil over medium-high heat for 3 minutes on each side, or until the fish is light. Spread the bean mixture evenly over the salmon fillet and serve immediately. Decorate if desired.
