Ingredients

8 ounces shredded feta cheese
4 ounces cream cheese, room temperature
2 garlic cloves, peeled and remaining whole
Kosher salt and freshly ground black pepper to taste
2 tablespoons olive oil
1 16-ounce sourdough loaf, sliced 1/4-inch thick
2 tablespoons olive oil
2 cups arugula, loosely packed
3 oz smoked salmon, thinly sliced
¼ cup thinly sliced red onion
2 tablespoons capers, drained

Blogger Changa Ri shares this recipe for salmon toast in her latest cookbook, "Damn Delicious.": 100 super easy and super fast recipes", and it really is the perfect dish for any hungry (but discerning) brunch. She thinks that stick snacks taste better for breakfast, and we're not going to argue. Ri warns, however, to be careful with their size. She ate about 10 slices of salmon toast before realizing that there were only a few snacks left for her guests for brunch. Oops. Prepare the whipped feta. Combine the feta cheese, cream cheese, and garlic in the bowl of a food processor and chop until the cheese is whipped and the garlic is finely chopped; season with salt and pepper to taste. With the engine running, add olive oil in a slow trickle until an emulsion forms.Preheat the oven to 425 °F.Brush each slice of bread with olive oil. Place the bread on a baking sheet and bake until crisp and lightly golden at the edges, 5 to 6 minutes.Sprinkle each slice of toast with whipped feta, arugula, smoked salmon, red onion, and capers, spreading the filling evenly. Serve immediately.
