Mint Oreo Icebox Cake

2 ½ cups heavy cream
1 cup powdered sugar
2 tablespoons chopped fresh mint
7 mint oreo cookies
18 Mint Oreo Thins Cookies, divided
¼ cup chocolate syrup

This decadent Oreo icebox cake is incredibly easy to make and requires only six ingredients. This is the perfect dessert for children's birthday parties, which does not require warming up in the kitchen. As it is, this cooling cake has a delicious mint and chocolate flavor, but feel free to diversify it by using your favorite Oreo cookie flavor (and not adding fresh mint).
Beat the heavy cream in the bowl of a mixer fitted with a whisk attachment on medium-high speed for 2 minutes. Add the powdered sugar and beat until stiff peaks form. Save 3/4 cup of whipped cream for the sprinkling. Mix the crushed mint with the remaining whipped cream.Cover an 8 1/2 x 4 1/2 baking dish with plastic wrap. For 7 Oreo cookies, remove the tops and discard them; place the cookies with the green filling down the center of the prepared pan. Put half of the mint whipped cream on the mold and spread evenly. Coarsely chop 12 oreo slices and sprinkle evenly with whipped cream. Add the remaining mint whipped cream. Cut the remaining 6 Oreo molds in half; place the cut side up on the edge of the mold and line the rim. Wrap the cake in plastic wrap and freeze for at least 8 hours.Flip the cake onto a serving platter; remove the plastic wrap. Drizzle with the chocolate syrup and top with the remaining whipped cream. Garnish with fresh mint and more cookies if desired.
