Mixed Bean Salad with Sun-Dried Tomatoes

Ingredients
1 jar of half-sun-dried tomatoes, packed in oil (8 oz.)
½ cup chopped fresh parsley
½ cup chopped fresh basil
1 can red beans (15 oz), washed and dried
1 can white beans (15 oz), washed and dried
1 can black beans (15 oz), washed and dried
1 can black peas (15.8 oz), rinsed and dried
½ red onion, thinly sliced
⅓ cup red wine vinegar
¼ cup sugar
1 teaspoon salt
½ teaspoon dry mustard
¼ teaspoon freshly ground black pepper

Mixed bean salad with sun-dried tomatoes is a great choice for your next party, because you can prepare it in advance and it will become even tastier after the flavors combine.
Tip the sun-dried tomatoes into a sieve over a bowl, reserving the oil. In a medium bowl, pour 1/4 cup remaining butter. Pour the remaining oil into a jar of sun-dried tomatoes; save for another use. Slice the peeled tomatoes; place in a large bowl. Add the parsley and the following 6 ingredients (via the onion) to the sliced tomatoes and mix gently until smooth.Add the vinegar and other ingredients to 1/4 cup of the remaining oil, stirring with a whisk. Pour over the bean mixture; stir gently to coat. Cover and refrigerate.
