Ingredients

Refill:
2 tablespoons finely chopped shallots
2 tablespoons white wine vinegar
2 tablespoons orange juice
1 teaspoon dijon mustard
½ teaspoon sugar
⅓ cup extra-virgin olive oil
Salt and pepper
Salad:
1 head of romaine lettuce, cut into small pieces
1 head of red lettuce, torn into small pieces
1 head of Boston lettuce, chopped
3 oranges, peeled, white core, cut into slices
4 ounces soft goat's cheese, crushed

To make

Romaine lettuce, red leaf lettuce, and Boston lettuce are mixed with orange slices and crumbled goat cheese to make this simple mixed green salad with oranges. Finish the citrus salad with a homemade vinaigrette made with Dijon mustard and orange juice. Green salad is the highlight of any dish.
Prepare the dressing: In a bowl, combine the shallots, vinegar, juice, mustard, and sugar. Slowly drizzle with oil, whisking constantly. Season with salt and pepper.Make the salad: Combine the lettuce leaves in a large bowl. Add the orange slices. Drizzle with the dressing, top with goat's cheese and serve.
