Mocha-Pecan Mud Pie

Ingredients
½ cup chopped pecans

1 teaspoon sugar
1 pint light coffee ice cream, softened
1 pint light chocolate ice cream, softened
1 cup coarsely chopped low-fat chocolate sandwich cookies with cream filling, divided (about 10 pieces)
1 (6 oz) ready-made chocolate chip cookie sheet
2 tablespoons light chocolate syrup

Arrange the pecans in a single layer on a baking sheet covered with cooking spray; sprinkle evenly with sugar.Bake at 350 ° C for 8-10 minutes or until lightly browned. Cool.Combine ice cream, 3/4 cup cookie slices, and 1/3 cup pecans; spoon into crumbs. Freeze for 10 minutes. Sprinkle evenly with the remaining cookie pieces and pecans. Cover with plastic wrap and freeze for 8 hours.
