Mocha Pudding

Ingredients

1 ¾ cups skimmed milk
½ cup brown sugar
1 tablespoon cornstarch
1 tablespoon instant coffee granules
¼ teaspoon salt
¼ cup halved
2 large egg yolks
1 tablespoon butter
1 tablespoon Kalua (coffee-flavored liqueur)
2 tablespoons dark chocolate chips

To make


Pour the milk into a medium saucepan; bring to a boil. Combine the sugar, cornstarch, coffee, and salt in a large bowl, mixing well. Mix the flour and egg yolks in half. Mix egg-yolk mixture with sugar. Gradually add half of the hot milk mixture to the sugar mixture, stirring constantly with a whisk. Return the hot milk mixture to the saucepan; bring to a boil. Reduce the heat and simmer for 1 minute or until thickened, stirring constantly. Remove from heat. Add the butter and liqueur.Spoon the pudding into a bowl. Place the bowl in a large bowl with ice for 15 minutes or until the pudding is cool, stirring occasionally.Cover the surface of the pudding with plastic wrap; refrigerate. Sprinkle each serving with 1 teaspoon of dark chocolate chips.
