Ingredients

2 cups water
1 cup granulated sugar
2 teaspoons of tartar
55 ritz crackers, divided
4 teaspoons fresh lemon juice from 1 lemon
2 ½ teaspoons ground cinnamon, divided
1 place the finished pie crust in a 9-inch-diameter baking dish. pie plate
5 tablespoons melted unsalted butter
½ cup brown sugar
Whipped cream, optional, for topping

To make

Apple pie without apples? Right. The buttery Ritz crackers in this light apple pie mimic the texture of real boiled apples, while spices, sugar and lemon juice combine to create a unique apple pie flavor.
Preheat the oven to 400°F. Bring the water, sugar, and tartar to a boil in a medium saucepan over medium-high heat. Add 30 whole Ritz crackers and simmer for 5 minutes. Remove from the heat and add the lemon juice and 2 teaspoons of cinnamon.Pour the mixture over the prepared pie crust. Chop the remaining 25 crackers. Combine the crushed crackers, butter, brown sugar, and remaining 1/2 teaspoon cinnamon; sprinkle the filling on top to make a cake.Bake in the preheated oven until golden brown, 20 to 25 minutes. Allow to infuse for at least 10 minutes before serving. Top with whipped cream, if desired.
