No-Bake Chewy Granola Bars

Ingredients
1 ¼ cups instant oatmeal
1 cup of a grain blend of fresh cereals (such as Cheerios + fresh cereals)
¼ cup unsweetened ground coconut flakes
¼ cup chopped unsalted pistachios
½ teaspoon vanilla extract
¼ teaspoon kosher salt
⅓ cup creamy peanut butter
⅓ cup of honey
¼ cup chopped pitted dates

These bars are a great snack to make on a Sunday and enjoy throughout the week. Wrap leftovers tightly in plastic wrap and store in the refrigerator. The bars will continue to harden as they cool down.
Combine the first 6 ingredients (with the added salt) in a large bowl.Combine the peanut butter, honey, and dates in a saucepan over medium-high heat. Cook for 3 minutes or until the peanut butter is melted, stirring frequently.Pour the peanut butter mixture over the oatmeal mixture; mix well until smooth. Place the mixture on an 8-inch square baking dish covered with cooking spray; press firmly to form a thick, even layer. Put the mold in the freezer for 10 minutes. Remove from the freezer and cut into 12 bars.
