Orecchiette with Broccoli, Tomatoes and Sausage

Ingredients

1 tablespoon olive oil
2 garlic cloves, finely chopped
8 ounces hot or sweet Italian sausage, peeled
1 15-ounce serving. tomatoes, diced, can be served with juice
Salt
1 pound orecchiette or inshell pasta
4 cups small broccoli florets (from one head)
Grated parmesan cheese, optional

To make


Heat the oil in a medium skillet over medium-high heat. Add the garlic and simmer until fragrant, about 30 seconds. Add the sausage and cook, breaking up with a wooden spoon, until it loses its pink color, about 6 minutes. Add the tomatoes along with the juice and 1/4 teaspoon salt and cook, stirring occasionally, until most of the juice has evaporated and the sauce is thickened, about 10 minutes.While the sauce is being prepared, bring a large pot of salted water to a boil. Add the pasta and cook according to the directions on the package. In the last 2 minutes of cooking, add the broccoli and continue cooking until the pasta is al dente and the broccoli is tender. Drain the water, return to the pan and pour over the sauce. Serve immediately, sprinkled with grated parmesan cheese if desired.
