Ingredients
1 ½ jalapeno or Fresno red peppers, peeled and finely diced
2 tablespoons finely chopped coriander leaves
2 tablespoons red wine vinegar
¼ cup fresh Meyer lemon juice
About 1/4 teaspoon fine sea salt
2 dozen oysters in half shells

Combine all the salsa ingredients in a bowl and refrigerate, covered, until cool (and no more than 6 hours). Add more salt. Serve with oysters.
