Oysters over Angel Hair
Bookmark this page

Ingredients
3 tablespoons olive oil
1 cup chopped green onion
½ cup chopped fresh parsley
3 garlic cloves, minced
4 cups standard oysters (approximately 3 12-ounce containers), drained
2 tablespoons fresh lemon juice
¼ teaspoon salt
⅛ a teaspoon of ground red pepper
⅛ a teaspoon of black pepper
6 cups hot cooked angel hair (about 14 ounces raw pasta)
½ cup (2 oz) grated fresh parmesan cheese
To make
This may seem like an unusual combination, but spring onions, garlic, and parmesan cheese combine perfectly with oysters in this delicate pasta dish. In our test kitchens, they were a delight.
Heat the oil in a large nonstick skillet over medium-high heat. Add the onion, parsley and garlic; cook for 8 minutes or until tender, stirring frequently. Add the oysters; reduce the heat and cook for 5 minutes or until the edges of the oysters curl up. Add lemon juice, salt and pepper. Add the macaroni and cheese; mix well to coat.
