Pan-Roasted Sausages with Apples, Onions, and Sage

Ingredients
2 tablespoons olive oil, divided
6 sweet Italian sausages (approximately 1 1/4 pounds)
1 large sweet onion, sliced 1/4-inch thick
8 garlic cloves, chopped
½ (8 oz) portobello mushrooms, cut into quarters
1 red bell pepper, sliced
2 Golden Delicious apples, sliced into 1/2-inch thick slices
2 tablespoons chopped fresh sage
½ teaspoon salt
¼ teaspoon freshly ground black pepper
½ cup low-sodium chicken broth
To make
Preheat the oven to 350 degrees. Heat 1 tablespoon of oil in a large nonstick skillet over medium-high heat. Add the sausages and cook, turning occasionally, for 6 minutes or until lightly browned. Remove from the skillet and set aside.Heat the remaining 1 tablespoon of oil over medium-high heat. Add the onion and garlic; cook, stirring occasionally, for 1 minute. Add the mushrooms and cook for 1 minute. Add the bell pepper and apples and cook, stirring occasionally, for 3 minutes or until the mixture is slightly softened. Add the sage, salt and pepper; cook for 1 minute. Add broth and sausage mixture.Bake for 20-22 minutes or until the sausages are cooked through and the vegetables are tender.
