Pancetta, Sourdough, and Apple Stuffing

Ingredients

1 pound pancetta, cut into 1/2-inch pieces. cubes
1 tablespoon olive oil
1 tablespoon minced garlic
1 cup chopped celery
1 ½ cups chopped onion
2 Golden Delicious apples, peeled and thinly sliced
2 cups reduced-sodium chicken broth
5 cubes of sourdough bread (1 inch thick) (made from 1 1/2-pound dough). bread)
⅓ cup chopped parsley with flat leaves
1 tablespoon chopped fresh thyme leaves

Spicy Western sourdough bread makes this filling delicious.
Preheat the oven to 350 degrees. Saute the pancetta in oil in a large skillet over medium-high heat, stirring frequently, for about 10 minutes. Add the garlic, celery, and onion; simmer for about 4 minutes. Add the apples; stir to coat. Transfer to a large bowl. Add the broth to the pan; stir to form chunks of browned crust. Pour into a bowl.Add the bread, parsley and thyme. Spoon the filling into a 9-by-13-inch greased pan, pressing down slightly to fill the pan. Bake until lightly browned and lightly crusted, about 45 minutes.Prepare in advance: Prepare the filling 1 day in advance and refrigerate, covered with a lid. Bake for about 1 hour.Note: A nutritional analysis is provided for each serving.
