Peanut Butter Crunch Cookies

Ingredients
1 ¼ cups granulated sugar
½ cup brown sugar
½ cup softened unsalted butter
1 teaspoon vanilla extract
1 large egg
7.9 ounces (approximately 1 3/4 cups) all-purpose flour
1 teaspoon baking soda
¼ teaspoon salt
⅓ cup creamy peanut butter
½ cup lightly ground peanut butter-flavored cereal (such as Barbara's Peanut Butter Puffins)
¼ cup unsalted peanuts, toasted dry
Parchment paper
3 tablespoons melted creamy peanut butter

Preheat the oven to 350 degrees. Combine the granulated sugar, brown sugar, butter, and vanilla in a large bowl; beat with a mixer on medium speed until fluffy. Add the egg; beat until smooth. Add flour, baking soda, and salt.Whisk 1/3 cup of the peanut butter into the cookie dough on medium speed. Add the cereal and peanuts. Place the dough in tablespoons, 2 inches apart, on baking sheets lined with parchment paper. Bake for 10 to 12 minutes or until the cookies are lightly browned. Drizzle the cooled cookies with 3 tablespoons of melted peanut butter.
