3 cups raw instant oatmeal
1 ½ cups granulated sugar
½ cup (4 oz) unsalted butter
½ cup whole milk
¼ cup light brown sugar
1 cup creamy peanut butter
2 teaspoons vanilla extract
1 teaspoon kosher salt
Red and green iced chocolate pieces (for example, M &M's)

Looking for the simplest cookie? These no-bake peanut butter wreaths should work. Oatmeal and peanut butter add buttery and salty notes, making them almost praline-like. Pre-roasting the oatmeal really improves the flavor and prevents the oatmeal from getting soggy. Since these cookies are very simple and are made from a huge serving, you can get creative with the fillings — try other candies, such as pieces of chocolate or a fun holiday sprinkle, to give them a serious look.
Preheat the oven to 350°F. Place the oatmeal in an even layer on a side-lined baking sheet. Bake in the preheated oven until the oat flakes are light brown and have a strong nutty flavor, 8 to 10 minutes, stirring once after 5 minutes. Remove from the oven.Line 3 baking sheets with parchment paper. Whisk together the granulated sugar, butter, milk, and brown sugar in a medium saucepan on medium speed until smooth. Let the mixture come to a boil; simmer, uncovered, for 1 minute. Remove from heat; add the peanut butter, vanilla and salt until smooth. Add the oatmeal. Let stand for 5 minutes.Place tablespoons of the oatmeal mixture on the prepared baking sheets (you'll get about 54 cookies). Use your fingers to make a hole in the center of each cookie (so that it looks like a wreath). Garnish with pieces of chocolate. Let the cookies cool until they are set, about 30 minutes.
